Happiness
Thanks Mum, I get so excited every time!
Now I’m going to cuddle up on the couch with a hot cup of tea and read the magazine from cover to cover. Some me time when my imagination travels back home!

Dinner on a Tuesday night
I find that Tuesdays are nothing days, it’s ages until the weekend and there never seem to be any morning tea at work on Tuesdays. To make things more interesting I try to cook something really nice for dinner on Tuesday nights. This is what I made tonight, it’s a dish inspired by a meal I’ve had at Matilda Bay restaurant. I used the basis but gave it a little Emelie twist, like I always do!
Em’s Pearl Barley and Pumpkin Risotto
200g pearl barley
1 clove crushed garlic
½ brown onion, finely chopped
50ml white wine
1 litre vegetable stock
1 red onion
1 small butternut pumpkin
80g grated parmesan
2 handfuls of spinach
Persian Fetta
Sundried tomatoes
Olive oil
Balsamic glaze
Sea salt and cracked pepper
Soak pearl barley in water and leave in the fridge the night before cooking the risotto.
Cut red onion into wedges and dress with the balsamic glaze, lay on baking paper. Peel and dice the pumpkin, coat with olive oil season well and roast on the same tray with the baking paper as the red onion. Cook in the oven in 180 degrees until the pumpkin is just cooked, you want the onion to be cooked well and be caramelised.
Sauté the onion and garlic in olive oil, then add the pearl barley and white wine. Add stock gradually until all stock is absorbed.
When the risotto is finished stir in the spinach, parmesan and sundried tomatoes. Also stir in half of the pumpkin. Serve in bowls or plates, top with reminder of pumpkin, the red onion wedges and Persian fetta. Voila!
